Introd­uction

Amphip­hilic molecules that consist of two parts. The head (polar) & tail (non-p­olar).

SAA in water

Polar head with water. Non-polar tail with air.
As SSA concen­tration increases, the surface tension of water is reduced; the forces of attraction between surfactant and water molecules are less than those between two adjacent water molecules, hence the contra­ction force (surface tension) is gradually reduced.
 

SAA in oil

Polar head with water. Non-polar tail with oil.
